BACK TO MENU INGREDIENTS: • 250g macaroni • Drizzle of olive oil • 1/2 brown onion • 3 garlic cloves, crushed • 130g cashew (soaked overnight in water and drained) • 1 tsp chilli powder • 1/2 tsp cumin • 3 tbsp nutritional yeast • Pinch of salt • 1 litre vegetable stock • 3 tbsp toasted breadcrumbs INSTRUCTIONS: 1. Cook the macaroni according to packet instructions. 2. In a pan, fry the onion in olive oil until soft. Add the garlic and cook for 2 minutes. 3. In a food processor, blend the fried onion and garlic with the cashews, spices, nutritional yeast, salt and vegetable stock until smooth. 4. Drain the macaroni, add to the pan and mix well withthe sauce. 5. Serve, topped with toasted breadcrumbs.
